Bayanus strain yeast selected in the Champagne region for the production of sparkling and other wines.
Particularly suitable for traditional fermentation of high-quality wines, partially carried out in bottles. Provides delicate, fruity sparkling wine components with subtle brioche and nutty notes.
Alcohol tolerance 16.0% vol.
Fermentation temperature 14 - 26 °C.
Influence on MLF: inhibited.
Nitrogen requirement: Medium.
Area of application: traditional production of premium sparkling wines in the Champagne method, suitable for long-term storage on the lees. Also suitable for reviving other wines that have stopped fermentation.
Aroma profile: Notes of blackcurrant and chocolate.
