  • Dunkles Weissbier (dark wheat beer) is a beer of German origin, which combines the freshness of classic wheat beer with the richness of darker malts.

    The recipe was created specifically for the "Best Brew Challenge 2026" competition.

     

    With this kit you will make 24 liters of beer.

    Original gravity (OG) – 1.050-1.055

    Final gravity (FG) – 1.010-1.014

    Alcohol content about 5.1%

    Color about 37 EBC

    Bitterness about 12 IBU

    Fermentation time about 7 - 10 days. Fermentation temperature. 17-25 C.

    We recommend aging the beer in bottles for 2-4 weeks.

     

    The set includes:

    Fermentable materials:

    1 kg "Best Munich malt;

    1.5 kg "Best Pilsen" malt;

    3 kg "Best Wheat Malt Dark" malt;

    0.2 kg "Best Caramel Aromatic" malt;

    0.1 kg "Best Black Extra" malt.

     

    Hops:

    25 g "Mittelfruh" hops, 60 min. boiling;

    15 g "Mittelfruh" hops, 15 min. boiling.

     

    Yeast:

    dry brewer's yeast LalBrew® Munich Classic 11 g - 1 pc.

     

    Recommended mashing temperature:

    Start mashing at 48 °C, rest for 10 minutes

    • Raise temperature up to 65 °C, rest for 50 minutes

    • Raise to 72 °C, rest for 30 minutes until iodine normality

    • Raise to 75 °C, start lautering at this temperature.
